Breakfast Berries with Yogurt and Cheese Parfait
This is an easy and healthy breakfast recipe. Start your day with an energizing, healthy, delicious breakfast meal. Your meals should be a balance of protein, fiber, carbohydrates and healthy fats and this recipe provides this.
I love eating berries in breakfast, they contain high amount of antioxidants and fiber. Yogurt and cottage cheese/paneer is great sources of protein and calcium. Oats is one of the healthiest grains containing important fiber, vitamins, minerals and antioxidants and the best part is they are a gluten-free whole grain.
I sometimes also have it as a dessert when looking for some healthy, easy and quick option. I usually make cottage cheese at home on weekends and refrigerate it and always have some crunchy oatmeal also in stock. You can make the crunchy oatmeal and store it in a airtight container. I use Granola instead, if I don’t have crunchy oatmeal in stock and still want a quick dessert or breakfast.
Breakfast Berries with Yogurt Cheese Parfait

INGREDIENTS
Yogurt Cheese Parfait
- 1 cup Mixed Berries Chopped
- 1 cup Cottage Cheese Crumbled
- 3 tablespoon Honey
- 1 1/2 cup Plain Greek Yogurt or Plain hung curd
- 1/2 cup Whipped Cream (OPTIONAL)
Crunchy Oatmeal
- 1 cup Rolled oats
- 1/4 teaspoon cinnamon powder
- 1/2 cup Brown Sugar Packed
- 2 tablespoon butter cold
Blueberry sauce
- 1 teaspoon Granulated Sugar
- 1 1/2 cup Blue Berries
INSTRUCTIONS
➦ Crunchy Oatmeal
Preheat oven to 350° F. Line up a cookie sheet with foil or parchment paper and keep aside . In a medium bowl stir together the oats, brown sugar, and cinnamon. Cut in butter with a pastry blender and mix in the oats mixture until mixture resembles coarse crumbs. Then spread the mixture onto the cookie sheet lined with foil or parchment. Bake for 15 minutes or until slightly golden. Remove from oven and allow to cool completely. OR if you don’t want to make the Crunchy oatmeal, you can also use Granola.
➦ Blueberry sauce
Place frozen or fresh blueberries in a saucepan and cook over low heat for few minutes, just enough to melt and mash the berries. With a spoon or potato masher, crush the berries roughly, add and mix granulated sugar to it.
➦ Yogurt Cheese Parfait
In a blender, add yogurt, cottage cheese, and honey and blend until smooth. Take out in a bowl and gently fold the whipped cream. It’s optional to add whipped cream.
➦ Assembling berries and Yogurt Cheese Parfait
Now let’s assemble the breakfast in a glass. Spread a layer of crunchy oatmeal or Granola at the bottom of a glass or jar. Add a layer of chopped mixed berries. and then a layer of Yogurt cheese parfait. Finally, top it with a layer of blueberry sauce, fresh berries, and a few sprinkles of crunchy oatmeal. Refrigerate it for at least 30 minutes before serving.
