Paneer also called as Cottage cheese is full of nutrition. Its good source of Protein and Calcium. A healthy person can consume approx. 40 grams of Cottage Cheese daily. Even the by products in the process of making Paneer are healthy and can be consumed.The water left in the process of making paneer is called whey. It can be refrigerated for further consumption.One cup of whey can also be used to make paneer next time instead of curd, it can also be used to knead the dough to make chapati or Paratha . Paneer can either be bought from a store or made at home.
How to make Cottage Cheese/Paneer at home ¦ Homemade Paneer/ Cottage Cheese
- 2 litre Whole Milk
- 200 ml heavy whipping cream ( optional)
- 4 tbsp. Yogurt OR 3 tbsp. lemon juice or 3 tbsp. Vinegar
Yield : 450 gms or 2 cups
Boil the milk in a large pan . If you want to make malai paneer (creamy cottage cheese) add cream to the milk and then boil, the fat in cream will make it more soft.
When it starts boiling , lower down the heat . Add yogurt or lemon juice or vinegar to it , while stirring gradually . Switch off the heat when it starts to curdle and let it settle for 2 minutes.
Once the milk has curdled, drain the whey water using a muslin cloth/ thin cheese cloth. In order to keep the cottage cheese(paneer) soft, give it cold water bath and rinse well. Make a knot to the cheese cloth, squeeze out the excess water and hang it for 30 minutes to drain the excess whey. Crumbled Cottage cheese (paneer) is ready.
To make solid paneer, wrap the crumble cottage cheese in a muslin cloth and now put a little weight on it for 1 hour to let it set . After an hour remove the cheese cloth and cut it into cubes drain.
