Banana Wheat bread

Yield : 1 loaf ( 14 slices)

Ingredients:

  • 1 cup all  purpose flour
  • 1 cup wheat flour
  • ¾ cup sugar
  • 1/3 cup packed brown sugar
  •  1/2 tsp. baking soda
  • ¼ tsp. salt
  • ¼ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ cup melted butter or cooking oil
  • ¼ cup buttermilk
  • 1 1/2 cup mashed banana ( 4 medium)
  • 1/2 cup chopped walnuts
  • 2 eggs
  • 1 1/2 tsp. baking powder

Preparation :

Preheat oven to 350° F . Grease the bottom and 1/2 inch up the sides of a 9  × 5 × 3- inch loaf pan or two 7½ × 3½ × 2- inch loaf pans , set aside.

In a large bowl stir together both the flours, baking powder, baking soda, salt cinnamon and nutmeg. Make a well in the centre of the  flour mixture and set aside.

In a medium bowl beat egg with a fork; stir in banana, sugar, oil and butter milk. Add egg mixture to flour mixture all at once; stir just until moistened. Fold in walnuts. Spread batter evenly in the prepared pan(s).

Bake in the preheated oven for 50 – 60 minutes for 9  × 5 × 3- inch loaf pan or 40 -45 minutes for 7½ × 3½ × 2- inch loaf pans or until a wooden toothpick inserted in the centres comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store bread overnight before slicing.
