This is a easy and healthy breakfast recipe. Start your day with a energizing , healthy , delicious breakfast meal. Your meals should be a balance of protein, fiber, carbohydrates and healthy fats and this recipes provides this.

 

I love eating berries in breakfast ,they contain  high amount of antioxidants and  fiber. Yogurt and cottage cheese/paneer are a great source of protein and calcium. Oats is one of the healthiest grains containing important fiber, vitamins, minerals and antioxidants and the best part is they are a gluten free whole grain.

 

I some times also have it as a dessert when looking for some healthy , easy and quick option. I usually make cottage cheese at home on weekends and refrigerate it and  always have some crunchy oatmeal also in stock. You can make the crunchy oatmeal and store it in a airtight container. I use Granola instead, if I don’t have crunchy oatmeal in stock and still want a quick dessert  or breakfast.

Crunchy Oatmeal
  1. Preheat oven to 350° F. Line up a cookie sheet with foil or parchment paper and keep aside . In a medium bowl stir together the oats, brown sugar, and cinnamon. Cut in butter with a pastry blender and mix in the oats mixture until mixture resembles coarse crumbs. Then spread the mixture onto the cookie sheet lined with foil or parchment. Bake for 15 minutes or until slightly golden. Remove from oven and allow to cool completely. OR if you don't want to make the Crunchy oatmeal, you can also use Granola.
Blueberry sauce
  1. Place frozen or fresh blueberries in a sauce pan and cook over low heat for few minutes, just enough to melt and mash the berries. With a spoon or potato masher, crush the berries roughly , add and mix granulated sugar to it.
Yogurt Cheese Parfait
  1. In a blender, add yogurt , cottage cheese and honey and blend until smooth. Take out in a bowl and gently fold the whipped cream. Its optional to add whipped cream.

  1. Now lets assemble the breakfast in a glass. Spread a layer of crunchy oatmeal or Granola at the bottom of a glass or jar. Add a layer of chopped mixed berries. and then a layer of Yogurt cheese parfait. Finally, top it with a layer of blueberry sauce, fresh berries and a few sprinkles of crunchy oatmeal . Refrigerate it for atleast 30 minutes before serving.

  • This recipe can also be made without cottage cheese.
  • Granola can be used as a substitute for Crunchy oatmeal.

  1. This looks delicious and I will keep this page handy. I have trouble coming up with new ideas. Thanks for putting something new out there! My daughter mentioned an avocado brownie and you have it! I will be trying this, soon. Right now, I am still so interested in the yogurt, granola breakfast, since that is what I have been enjoying a lot, these really hot days. The cottage cheese is just the added protein I was missing, at times. I get tired of my green protein powder! Lynne
